Shitake works actually, and so does enoki, because the baking time is really short. And do try to find mirin, because the taste is very very different. Miso-cod is a rather different recipe. But I can’t find any Japanese mushrooms other than shiitake and enoki, and these two doesn’t seem fit for baking. So, I’m going to use fresh white mushrooms instead. And I’m going to replace mirin with miso paste… Are you from Penang? I’m a college student from Canada!
