Easy Miso Glazed Salmon

Miso Glazed Salmon | Delicacious

I am a fan of salmon, when it is prepared right. I like salmon best as sashimi; smoked salmon comes close when served with eggs benedict, rosti or in a good caesar salad. I may be changing my preferences soon though. This easy miso glazed salmon is rising fast in my list of favourite salmon dishes. The reasons? It is simple, healthy and really delicious.

Miso is wonderful not just because of its flavour, but because of its health benefits. There is a long list of benefits but I will just name a few. Scientifically, miso has been proven to reduce risks of colon, breast and prostate cancer. It is a source of probiotics, is high in anti-oxidants, lowers LDL (bad cholesterol) and strengthens the immune system. Are you rushing to your nearest Japanese food store to buy a tub of miso yet?

The longer miso is aged, the deeper its flavour and its colour. Commercially, miso is sold as shiromiso (white miso) or akamiso (red miso). You can also buy a blend of it. For this recipe, I used a blend of both white and red miso. Since the flavour of akamiso is stronger than shiromiso, you will want to adjust the amount of miso used according to the type you used.Continue Reading

Pasta salad with creamy avocado dressing

Pasta salad with creamy avocado dressing | Delicacious

Are you a fan of avocado? I sure am. I love them plain, on toast with a dash of salt and pepper, in sandwiches and the list goes on. This time, I decided to use them to dress up a simple pasta salad. Originally, I just wanted to slice the avocado up and toss the pieces into the pasta salad. Then I thought, why not make it into a dressing? And maybe dress it up a little with some lemon and cilantro? Yes you read right. Cilantro. Cilantro goes really well with lemon and/or lime, and I was sure it would add some kick to the dressing. It did – it made the dressing taste really REALLY good.

The best part? This pasta salad is so easy to whip up and you can throw in practically any ingredient you fancy. I threw in some ham, cherry tomatoes and mushrooms because I had those things in my fridge but you can mix and match to your creativity. My husband and toddler loved this  chilled pasta salad and I am sure you would too. If you end up with too much dressing, use it as a dip. In fact, I am considering whipping up another batch of dressing just to eat it with chipsContinue Reading

Salted Coffee Chocolate Chip Cookies

Salted coffee and choco chip cookies | Delicacious

A couple of years ago, I picked up the sweet and salty bug. The bug that made me love all things that were a combination of sweet and salty – salted caramel, world peace cookies and even McDonald’s McGriddle Sausage and Egg muffins. Yes I am not kidding, even that. It is a really persistent bug because years later, I still love things sweet and salty.

About a week ago I was thinking of baking cookies and was combing through a couple of recipes, thinking of what to bake. I came across Amanda’s Brown Butter Salted Caramel Mocha Cookies and thought they were perfect. I wanted a cookie that was less sweet however, so I decided to omit the caramel this time round, increase the chocolate chips and add in cornstarch to make the cookies chewy. Yes – did you know that adding cornstarch to your cookie batter makes your cookies chewy in the middle? Try it. It works.

Pork and Prawn Gyoza

Pork and Prawn Gyoza

How many gyoza fans do we have here? Me! I’m definitely one. It is one of those items that I frequently order at ramen shops to accompany my ramen. There are typically two ways of cooking gyoza – pan fried then steamed or fully fried. I prefer the pan fried then steamed version as I feel the steaming process keeps the filling juicy. I also like my gyoza made with more filling. Sadly, most store bought ones don’t quite make the cut – most ramen places that I frequent scrimp on the gyoza filling. SO…. I decided to make my own! Packed with more filling (oh so yummy), pan fried, then steamed.Continue Reading
